The Hitch Welcomes Dreamland To The Family

The Hitch is excited to announce the addition of a new food truck: Dreamland! Tripp and Kelly Gordon are the owners and chefs of Dreamland, and are San Marcos’ sweetest couple. Tripp does all of the cooking and loves his job. He always wanted to share his love of food with the people of San Marcos, and now he can with Dreamland. Dreamland features several unique dishes that range from savory breakfast foods, to tangy and refreshing Hawaiian dishes.

Tripp was originally from the bay area outside San Francisco, but spent 10 years in Hawaii. After watching the Hawaiian chefs at prestigious resorts, Tripp mastered the culinary cuisine and added his own personal flare.

The couple wound up in New Braunfels five years ago to support their son who received a tennis scholarship at only 14 years old! It was during this time that Tripp wanted to do something for himself and share his love for cooking with everyone else. His first Dreamland truck started here in San Marcos, near Mimi’s Cafe.

“Our son is now playing tennis at Penn State. We kept our home because we fell in love with Texas, so it seems fitting to make our home in San Marcos at The Hitch,” Kelly said.“We feel very lucky to be in such a safe and uplifting town.”

Tripp and Kelly are excited to be in San Marcos and to be a part of the family at The Hitch. Kelly said the San Martians are so open to new ideas and are so welcoming, and Dreamland and its distinct style will fit right in!

Dreamland serves breakfast all day. Their specialties are waffle recipes, salads, country fried steak and Loco moco, which has unique ingredients. Kelly said that our Hitchers will have to figure out what the Loco moco is made of when they stop by.

 

“Three favorite waffle recipes are the Chicken & Waffles, Nutella & Fruit and the Savory! The Country Fried Steak and Loco Moco are quickly becoming very popular, as well.”

 

Tripp loves to cook, and he loves to make sure that each dish counts. That is what makes Dreamland special to The Hitch and San Marcos.

Q&A: Patty Wagon

Fred Varela, the owner of Patty Wagon food truck, is a hard-working, small-business owner in San Marcos. Fred makes all the food from scratch, including the ranch and mayonnaise. Patty Wagon is known for its fresh flavors and delicious burgers. Read on to find out more about Fred and his delicious food!


How long have you been cooking delicious burgers at Patty Wagon?

"Six and a half, almost seven years."

How long have you been in the restaurant industry?

"I have been in the restaurant business as a chef for 41 years. I graduated from Texas State University and I started working for Chartwells. Now I couldn't be happier working at Patty Wagon"

What are the differences of working in a food truck vs. working in a restaurant?

"There’s a big difference—food trucks have become a high demand; it’s a lot of work. Everything has to be fresh and there’s only so much space so you have to constantly buy things every single day. In a restaurant, you work by quantity."

Have you always worked in San Marcos? Do you live in this beautiful college town now?

"I haven't always worked in San Marcos. I’ve worked in Austin, San Antonio, Houston, Dallas, almost every city in Texas. I actually live in Kyle right now, but I’ve lived in San Marcos for 26 years."

What do you love about San Marcos?

"I’ve watched it grow—from the university being hardly anything to where it is now. I think in another five years Guadalupe Street will be like 6th Street in Austin. I love seeing how much this city has grown."

What is your top-selling menu item?

"All of my burgers are the best-sellers, but one in particular is the Jalapeno Popper Burger. But I have a variety of French Fries I make, such as the Marshmallow Sweet Potato Fries. The fish tacos are also a top-seller here at Patty Wagon."

Can you tell us about your homemade items?

"I make all my mayo and ranch from scratch. I make almost everything here in the food trailer. Everything is fresh!"

Do you have vegetarian options?

"I have a vegetarian burger made with black beans and corn. People go crazy for it. There are many other vegetarian side dishes that many people get as main dishes, too!"

Congratulations, you did it! 

As many of you may know, Texas State University's spring graduation is upon us, and The Hitch family would like to say congratulations to all of our undergraduate and graduate students that are walking the stage! Your tenure during your collegiate years is known to be the best, yet most challenging times in your life, therefore be proud of what you have accomplished.

We are sad to see y'all go, but we know that you'll never forget the beautiful, sunny days you spent with good company here at The Hitch. Whether it be the customer favorite: Holy Avocado Pita from St. Pita's, to the mouth-watering Boss Hogg Sandwich from Wanderlust, to the delicious Pad Thai from Wat Zab, to Patty Wagon's customizable burgers, to the always-fresh patacones from El Sabor de Mi Tierra, to Smoked Out's yummy Loaded Brisket Waffle Fries and last, but not least, to Mambo Freeze's one-of-a-kind Piccadilly shaved ice, we hope that you're taste-buds will cherish those memories forever!

2016 MR Fest: Live Music + Good Food

Can you imagine anything better than live music, beautiful weather and good food? More than 100 music lovers joined us at our food truck park recently to enjoy KTSW's MR Fest 9th annual live music festival! With The Hitch as one of its featured venues, San Martians got their groove on with 5 talented bands, played a little game of bean-bag toss and jumbo janga with our awesome food truck cooks and of course, grubbed on some delicious dishes. With the Texas sun beaming down, MamboFreeze sweet snow-cones and our umbrella-covered picnic tables were the perfect cool down.

The Hecklers

To kick-off the fun-filled afternoon was a Rock n' Roll band, known as The Hecklers, who had everyone cheering!

Based in Houston, Texas, King Finn brought a nice mix of ambience, instrumentation + anthemic melodies to The Hitch!

It may have been a warm day, but the Madisons were sure to get the crowd dancing and singing with their great mixture of instruments, such as an accordion, violin, banjo + more!

Based right here in San Marcos, Texas, Clever Heads Prevail left the crowd wanting more with their mysterious and blazing hot mix of india + alternative rock.

The Hitch welcomes El Sabor de Mi Tierra

Have you heard the news? There’s a new food truck in town and they are excited to call The Hitch their new home!

El Sabor de Mi Tierra, which stands for “the flavor of my country,” serves authentic and delicious Colombian food and offers a variety of options such as vegetable dishes for vegetarians or meat dishes for meat-lovers.

Born and raised in Colombia, Sandra and her daughter, Paola, are the two main owners and chefs of El Sabor de Mi Tierra. Other members of their family, like Sandra's husband and son, also cook with them part time. 

Along with exquisite talent in South American cuisine, dedication and commitment bring Sandra and her family to The Hitch.

 

 “Our food incorporates the perfect balance of fresh, organic food and flavor that will take you to Colombia with every bite,” Paola said.

 

The first and third Wednesday of every month, they will have Texas State “spirit day.” All students will receive a 10 percent discount and a free soda with a valid student ID.

Every second Wednesday of the month, the fire department, police enforcement and ambulance service will get a 15 percent discount and a free soda with a valid ID.

Their hours of operation are 11:00 a.m. to 7:00 p.m. Monday through Saturday.

Come out and try one of their specialty dishes, you won't regret it!
