C’est La Vie… We Bid You Adieu, Hitchers

Since June 2011, The Hitch has been a meeting place where San Martians could come together to enjoy a variety of new and creative foods. In a time when the cost to open a restaurant requires an amount of capital that has become insurmountable for many, a common thread amongst the more than 20 food vendors we’ve had over the past seven years has been a sense of boot-strapped entrepreneurship. The prospect of a food trailer allowed many of our hard-working vendors to realize the dream of business ownership and allowed you all to enjoy their delicious cuisines. For that, we’re all thankful.

The Hitch has also been proud to be a part of the community in many other ways.  It has been home to Art Unhitched (now Art Squared), a venue for MR Fest, and a sponsor of many of the wonderful events in nearby Plaza Park such as Sights and SoundsMovies in Your ParkSummer in the ParkRelay for Life, the 72 Degrees Festivalthe Mermaid Society’s Aqua Faire and many other events. We even had a merry-go-round for a few weeks back in 2012!

Sadly, over the past few months, one-by-one each of our current vendors have had to make the hard decision to permanently close or relocate outside of San Marcos. While there is a unique set of factors for each circumstance, a common thread has been uncertainty regarding their ability to continue to obtain a permit to operate from the City’s Health Department.  Since March of this year, new Health Department staff has materially changed the rules for vendors to obtain or renew their Mobile Food Establishment permits and is insisting on requirements that food trailers do not find feasible. Despite many requests for a public process and Council engagement, none has occurred to date and the veil of uncertainty around the regulations presents a business risk most trailers are not able to take. Further, the new requirements have also made it impractical for new trailers that have wanted to join The Hitch to embark on the permitting process.

We think the culture of food trailers in San Marcos is something worth keeping. If you agree, please drop a note to the City Manager’s office or reach out to Council and ask that they codify a reasonable ordinance that allows Mobile Food Establishments to operate at places like The Hitch and not leave things up to varied staff interpretation. Tell them you want a community where the smallest of small businesses are supported. While The Hitch is unlikely to reopen, there remains at least one park on Guadalupe Street and those vendors deserve your support, as do future vendors that would love the opportunity to bring their food to you in the future.

We’ll start thinking about what’s next for this location, but we don’t yet know what that will be. In the meantime, there are some parking spaces available for monthly rental, principally intended to provide options for the employees of downtown businesses. Those are available via the ParqEx app.  Most importantly, the property will continue to be home to the Tuesday San Marcos Farmers' Market and we hope you’ll continue to support them each Tuesday from 3 - 6 p.m.

In closing, please join me in thanking the Big Kahuna, Bobby Hotdogs, Cafe Azteca, Dreamland, El Sabor de Me Tierra, Hot Diggity, How Sweet It Is (Sugar Shack)MamboFreeze, Mr. Bigotes, Oh My Pizza Pie, Patty Wagon, Redbud Roasters, Say Cheese, Smoked Out BBQ (new concept coming soon), Smokin’ Aces, St. Pita’s, SUP Adventures San Marcos, The Caboose, The Tin Box, WANderLust, and WAT ZAB.  Please click on the links provided to find the new locations of vendors that continue to operate either in brick and mortar or in other nearby areas outside the City.

Also, WANderLust remains open until further notice but expects to close by the end of November. So rush out and get your WANderLust fix quick. Then, look for them in Austin at the beginning of 2018.

A Little Bit Of Everything

The Hitch has always had amazing, diverse food with options, but as it expands, so does our customers’ palettes.

SOUTH AMERICA

Our newest addition to The Hitch family, Café Azteca, features original coffee and pastries derived from Mexico. If you are a fan of authentic Mexican culture, you should definitely visit this tiny coffee trailer at The Hitch.

El Sabor De Mi Tierra is a customer favorite  at The Hitch. This food truck  serves delicious Colombian dishes that keeps customers coming back for more . Empanadas , arepas, patacones, yucca and plantains – these are a few of the iconic dishes that brings  Colombian culture to San Marcos and  has the community  falling in love.

ASIA

Out of all of our food trucks, WANderLust has one of the most eclectic menus.  Food truck owner Wendy Wan  offers many Asian-inspired noodle dishes. Korean Kimchi  glass noodles, Singapore vermicelli noodles, Indian curry soba noodles. All of these dishes include the traditional ingredients and cooking methods of Asian cooking, but still bring a fusion flare.

AMERICAN CLASSICS

Both Smoked Out and Patty Wagon serve dishes that most of Americans  were born and raised with – burgers and barbecue. Patty Wagon has the typical burger but introduces new spicy options like  the jalapeño popper and their delicious sweet potato fries. Smoked Out   offers satisfying barbeque and loaded  waffle fries that will remind you of the classic southern flavors that you love. Both of these food trucks give you the classics that you love with sides and toppings that make it a new experience every time.

Mambo Freeze can help you wash all that tasty grub down with something sweet with their amazing snow cones and tasty snacks. The variety at Mambo Freeze continues to bring tons of flavor with their endless options of snow cone flavors and spicy snack such as tamales and corn in a cup that compliment something sweet.

GREEK

Last, but certainly not least, St. Pita’s has some of the best Greek inspired cuisine in San Marcos. They have traditional hummus and falafel. What comprises of St. Pita’s Mediterranean cuisine is the usage of key ingredients such as a thick, single-layer of Greek style pita packed with veggies and lamb. Any of their dishes will take you to Greece through your taste buds!

Why The Hitch is the perfect summer hangout!

Summer is here, Hitchers! We know that sometimes the slow summer season can get repetitive, so if you are looking for something different and fun to do, The Hitch is the place to be. Here are six reasons why The Hitch is the perfect summer hangout:

1) The Hitch has a sunshade, so you can beat the heat. 

We know the Texas heat can be brutal. That’s why we put in a protective sunshade just in time for summer. Come check it out!

2) The Hitch is walking distance from the river.

Spending the afternoon at the river is a favorite pastime of San Martians, but swimming, floating and sunbathing can really work up an appetite. Luckily, The Hitch is within walking distance from the San Marcos River! Plus, The Hitch’s outdoor location means it’s okay to come dressed in a swimsuit!

3) Can't agree on what to eat? No Problem! The Hitch has variety.

“Where do you want to eat?” “What are you in the mood for?” are the questions that have plagued couples for decades. With barbecue, Colombian, burgers, breakfast food, pitas and more, The Hitch has something for everyone!

4) You can play Texas-sized board games, like Giant Jenga!

Ignite your competitive side by playing a round or two of giant Jenga! Play against your friends, significant other or family member while you’re waiting for your food. You can also play cornhole or checkers! Just ask Fred at The Patty Wagon for beanbags or the checkers board!

5) Make it a "staycation" and try food from all over the world.

Don’t want to deal with the hassle of travel? Can’t afford expensive plane tickets? Well at The Hitch, you can try foods from vacation destinations all over the world! WANderLust has everything from Italian to Indian food. Try the Loco Moco at Dreamland to get a taste of Hawaii! El Sabor de Mi Tierra has the most authentic Colombian street food you will find in San Marcos. Go Greek at St. Pitas and cool down at Mambo Freeze. Try some Mexican coffee from Café Azteca or indulge in some good old American food at Patty Wagon and Smoked Out.

6) Eat dinner at The Hitch and then walk over to the Summer in the Park concert series.

Every Thursday night from June 1 to August 10, you can enjoy a free concert. Concerts start at 7:30 p.m. and they span a multitude of genres. The Hitch Welcomes Dreamland To The Family

The Hitch is excited to announce the addition of a new food truck: Dreamland! Tripp and Kelly Gordon are the owners and chefs of Dreamland, and are San Marcos’ sweetest couple. Tripp does all of the cooking and loves his job. He always wanted to share his love of food with the people of San Marcos, and now he can with Dreamland. Dreamland features several unique dishes that range from savory breakfast foods, to tangy and refreshing Hawaiian dishes.

Tripp was originally from the bay area outside San Francisco, but spent 10 years in Hawaii. After watching the Hawaiian chefs at prestigious resorts, Tripp mastered the culinary cuisine and added his own personal flare.

The couple wound up in New Braunfels five years ago to support their son who received a tennis scholarship at only 14 years old! It was during this time that Tripp wanted to do something for himself and share his love for cooking with everyone else. His first Dreamland truck started here in San Marcos, near Mimi’s Cafe.

“Our son is now playing tennis at Penn State. We kept our home because we fell in love with Texas, so it seems fitting to make our home in San Marcos at The Hitch,” Kelly said.“We feel very lucky to be in such a safe and uplifting town.”

Tripp and Kelly are excited to be in San Marcos and to be a part of the family at The Hitch. Kelly said the San Martians are so open to new ideas and are so welcoming, and Dreamland and its distinct style will fit right in!

Dreamland serves breakfast all day. Their specialties are waffle recipes, salads, country fried steak and Loco moco, which has unique ingredients. Kelly said that our Hitchers will have to figure out what the Loco moco is made of when they stop by.

 

“Three favorite waffle recipes are the Chicken & Waffles, Nutella & Fruit and the Savory! The Country Fried Steak and Loco Moco are quickly becoming very popular, as well.”

 

Tripp loves to cook, and he loves to make sure that each dish counts. That is what makes Dreamland special to The Hitch and San Marcos.

Q&A: Patty Wagon

Fred Varela, the owner of Patty Wagon food truck, is a hard-working, small-business owner in San Marcos. Fred makes all the food from scratch, including the ranch and mayonnaise. Patty Wagon is known for its fresh flavors and delicious burgers. Read on to find out more about Fred and his delicious food!


How long have you been cooking delicious burgers at Patty Wagon?

"Six and a half, almost seven years."

How long have you been in the restaurant industry?

"I have been in the restaurant business as a chef for 41 years. I graduated from Texas State University and I started working for Chartwells. Now I couldn't be happier working at Patty Wagon"

What are the differences of working in a food truck vs. working in a restaurant?

"There’s a big difference—food trucks have become a high demand; it’s a lot of work. Everything has to be fresh and there’s only so much space so you have to constantly buy things every single day. In a restaurant, you work by quantity."

Have you always worked in San Marcos? Do you live in this beautiful college town now?

"I haven't always worked in San Marcos. I’ve worked in Austin, San Antonio, Houston, Dallas, almost every city in Texas. I actually live in Kyle right now, but I’ve lived in San Marcos for 26 years."

What do you love about San Marcos?

"I’ve watched it grow—from the university being hardly anything to where it is now. I think in another five years Guadalupe Street will be like 6th Street in Austin. I love seeing how much this city has grown."

What is your top-selling menu item?

"All of my burgers are the best-sellers, but one in particular is the Jalapeno Popper Burger. But I have a variety of French Fries I make, such as the Marshmallow Sweet Potato Fries. The fish tacos are also a top-seller here at Patty Wagon."

Can you tell us about your homemade items?

"I make all my mayo and ranch from scratch. I make almost everything here in the food trailer. Everything is fresh!"

Do you have vegetarian options?

"I have a vegetarian burger made with black beans and corn. People go crazy for it. There are many other vegetarian side dishes that many people get as main dishes, too!"

Congratulations, you did it! 

As many of you may know, Texas State University's spring graduation is upon us, and The Hitch family would like to say congratulations to all of our undergraduate and graduate students that are walking the stage! Your tenure during your collegiate years is known to be the best, yet most challenging times in your life, therefore be proud of what you have accomplished.

We are sad to see y'all go, but we know that you'll never forget the beautiful, sunny days you spent with good company here at The Hitch. Whether it be the customer favorite: Holy Avocado Pita from St. Pita's, to the mouth-watering Boss Hogg Sandwich from Wanderlust, to the delicious Pad Thai from Wat Zab, to Patty Wagon's customizable burgers, to the always-fresh patacones from El Sabor de Mi Tierra, to Smoked Out's yummy Loaded Brisket Waffle Fries and last, but not least, to Mambo Freeze's one-of-a-kind Piccadilly shaved ice, we hope that you're taste-buds will cherish those memories forever!
